Bryan Gregor

Culinary Institute of America, Senior Year Favorite dish he’s made: Chocolate Soufflé

Bryan grew up in Connecticut, where one of his first restaurant jobs was washing dishes at the Saybrook Fish House in Canton. After leaving the University of Connecticut in 2014, Bryan moved to Boston and began working in restaurant dining rooms without knowing where that path would eventually lead him. Over the next eight years, he worked as a server and bartender and developed a lasting passion for food, wine, and hospitality. During that time, he gained a mentorship and beverage education from Sandy Block, the first Master of Wine on the East Coast, and earned his Introductory Sommelier certification through the Court of Master Sommeliers, Americas. After witnessing the effects of the COVID-19 pandemic on the restaurant industry, Bryan decided that formal culinary training would help him build a more sustainable and purposeful career. He enrolled at the CIA to earn my Bachelor’s Degree in Culinary Science and strengthen both his technical cooking abilities and his understanding of the science behind food. Recently, he completed his externship at the Michelin-starred restaurant Atera in New York City under Executive Chef Ronny Emborg and was invited to continue working there as a stagiaire on Sundays. During the week, he works as a research assistant in the CIA’s Department of Culinary Science and Nutrition. After graduation, he hopes to continue exploring food science research and development while establishing a private chef business that provides refined, fine-dining-style meals for small gatherings. Bryan believes food remains one of the most meaningful ways people can connect without a screen, and he hopes to create memorable experiences that bring people together through thoughtful cooking and hospitality. The Cutting Edge Culinary Scholarship will help make it possible for him to continue his studies, complete his degree, and pursue a career that combines culinary science, fine dining, and personal hospitality.
